I did a live cooking demonstration this by weekend for a health + fitness expo here in Charlotte. It was a lot of fun!

I was super nervous at starting time — and I think it showed 😬 — but I warmed up every bit I went forth and the crowd was really squeamish and supportive.

It'south got ALL the crunch from the romaine lettuce; tons of heartiness from the chick peas; big, bold flavors from the olives and peppers; cool, well-baked diced cucumbers and a salty kicking from the feta cheese.

Seriously flavorful!

Notes on Mediterranean chopped salad:

  • This recipe is vegetarian as is merely you could easily add some grilled chicken, pork, fish or steak on summit.

Ingredients

  • 8 oz. romaine lettuce, chopped
  • i 15.5 oz. can chick peas, rinsed and drained
  • one medium cucumber, seeds removed and diced
  • 1/ii loving cup olives, pitted and chopped
  • 1/2 cup piccadew peppers, chopped
  • 1/2 cup feta cheese crumbles
  • 1/iii to ane/2 cup Italian dressing (homemade or store-bought)

Instructions

  1. Combine all salad ingredients in a large basin and mix well to combine.
  2. Drizzle with vinaigrette, starting with about 1/three loving cup and adding to gustatory modality.
